Even though the weather has been mild for us this Winter, our meals have trended toward the slow-cooked and root-veg heavy. While we love the hearty stews and roasted… well, anything, we often find ourselves craving a bit of raw crunch. Hothouse cucumbers are readily available year-round, and with a light dressing, come together in a flash to make a satisfying salad.
I was collecting the cucumbers necessary for one of these quick salads when I saw a small flat of kiwi on sale, and voila, the Kiwi Cucumber Salad made a debut in our kitchen. The kiwi gives the salad some tangy sweetness, and a big boost of Vitamin C. Just what you need in the middle of Winter.
English Cucumber Salad with Kiwi
1 medium size English cucumber
4 medium kiwi, peeled
1/4 of a small red onion
2 Tbsp apple cider vinegar
1 Tbsp honey
1/4 tsp sea salt
This recipe is so easy, it almost doesn’t need an explanation, but this is how I prepped it:
Slice cucumber thinly. Peel kiwi and slice into thin round slices.
Quarter the onion, reserving the remaining onion for another use.
Slice onion quarter into thin slices.
Place cucumber, kiwi and onion into a medium bowl.
In a small bowl or cup mix honey and vinegar with salt.
Pour dressing onto salad and toss to combine.
